This is a crispy and spicy schezwan  dosa recipe. Schezwan dosa is one of the fusion street  food offered by the street vendors in mumbai. Its basically a fusion of the south indian and indo chinse cusine, this dosa variety is also know as schezwan sada dosa.Schezwan dosa served with coconut chutney or sambar.

INGREDIEND NEEDED:
For schezwan noodles:
Garlic - grated 
Spring onion - chopped
Small onion - chopped
Carrot - 1 chopped
Cabbage - 1\2 cup grated
Schezwan sauce - 1 tsp
Salt - to taste
Rice noodles - 1 cup
Oil - required
For dosa :
Dosa butter - 4 cup
Butter - 3 tsp 
Schezwan sauce - 2 tsp


METHOD:
Schezwan noodles recipe:
Firstly, in a large kadai heat oil.Futher add garlic and saute well.Also add spring onions and continue to sauce.Now add vegtables of your choice like carrot , cabbage, spring onion, saute for a minute or till they shrink slightly. Additionally add salt, schezwan sauce.
Also add cooked rice noodles.Mix gently without breaking the rice noodles and making sure the sauce has covered uniformly . Keep aside
Schezwan dosa:
Firstly, heat the dosa tawa , smear oil over the tawa and wipe off with a tissue paper.
Sprinkle some water and wipe off with wet cloth or tissue.and pour a ladleful of the dosa butter on it and spread in a circular motion thin circle.once the dosa dries out from the top, add a spoon of butter.
Also add schezwan sauce sauce, adjust the sauce according to the spice level you are looking for and mix the sauce and butter together
Also spread 2 tsp of prepared schewan noddles at one side. Cook till the bottom of dosa turns golden brown. Then roll the dosa along with noodles and cut half.

Finally serve the dosa with coconut chutney or sambar.
